Our homage to the towering greens at NYC’s Via Carota, this salad is at its most dramatic—and most delicious—with a variety of leaves, some mild and large (butter, Bibb, Little Gem), some spicy and small (like arugula). The tender herbs (like mint, dill, basil, tarragon, parsley, cilantro) are optional but highly recommended.
- 1½ cups extra-virgin olive oil
- ¾ cup any combination red wine vinegar, white wine vinegar, and/or apple cider vinegar
- 8 oz. mixed tender greens
- 1 cup torn tender herbs (optional)
Combine oil, vinegars, mustard, and honey in a large resealable jar or airtight container; cover and shake vigorously until emulsified, about 30 seconds. Season with salt.
Do Ahead: Vinaigrette can be made 1 month ahead. Cover and chill. Shake to re-emulsify.
Drizzle 3 Tbsp. vinaigrette into a large bowl, coating sides and bottom of bowl. Add greens and herbs (if using). Using your hands, fold greens, working from the bottom, out and up the sides of the bowl, until evenly coated in vinaigrette. Season with salt until greens taste vibrant (you may need to season and toss a few times). Mound salad, higher than wide, on plates or in shallow bowls.

Everyday Green Salad Recipe
I wanted to call this my everyday green salad because it’s not unusual for us to eat it 4-5 times a week. To me, it’s the easiest, go-to salad that goes with almost anything. I always have the ingredients on hand and it’s a no-brainer side dish to many of our meals. I hesitated putting it up here because it’s so simple but then I remembered that it wasn’t so long ago that I always looked to recipes that I found on the internet to make salad dressings. In fact, when I’m looking for some new inspiration, I still do. Another perk is that my boyfriend still doesn’t know how to make it so instead of having to walk him through it every time, he can just look it up here (woohoo!).
Because I make this so often, it felt really strange to measure out all of the ingredients. I usually just eye everything up in the bowl and adjust as needed. I also don’t make it the same way every time. I’ve subbed maple syrup for the honey and all types of acid for the white wine vinegar (including red wine vinegar, apple cider vinegar and lemon). So, if you don’t have the exact ingredients, feel free to play around. As long as you keep the proportions the same it should be well-balanced! The same goes for the salad. Avocado, radish, cherry tomatoes and cucumber are pretty standard around here but you can easily add different nuts or seeds (sunflower seeds, toasted chopped almonds, walnuts) or different vegetables (grated carrot, scallions, finely chopped red onion, steamed and cooled potatoes). We’ve even added some tuna or hardboiled egg to the salad to make it a full, light meal. All you want is crunch and a bit of variety with every bite, the dressing will compliment it all!
You can easily swap out other acids for the white wine vinegar (including apple cider vinegar, red wine vinegar or lemon. You can also swap maple syrup for the honey.
Everyday Healthy Salad Ingredients
There are no fancy dressing in this simple side dish salad, it really doesn’t need them. Each ingredient brings a unique flavor, which makes this salad super satisfying. Here are the ingredients:

Step-by-step photos for making Everyday Vinaigrette
Step 1. Assemble the ingredients: red wine vinegar, kosher salt, pepper, garlic powder, extra virgin olive oil, and a neutral tasting oil (grapeseed, vegetable, canola).
- TIP: I recommend a good quality garlic powder over fresh garlic. The flavor is mild, and it will keep longer in the fridge than if it's made with fresh garlic.
Step 2. Combine the ingredients. Here are 2 easy methods:
- 1st Method: Add the vinegar, salt, pepper, and garlic powder to a bowl or 2-cup measure cup. Whisk together. While whisking rapidly, pour in the 2 oils in a thin stream.
- 2nd Method: Combine ingredients in a jar or shaker bottle. Shake vigorously until well combined. I prefer using a salad dressing shaker bottle, since I can measure, shake, store (in the fridge), and pour from the same container.
This dressing is good on any combination of greens and veggies. I often drizzle it over a plate of sliced tomatoes or use it as a marinade for chicken. It's, of course, also perfect with my Everyday Italian Tossed Salad. Here's that recipe:
How long will it keep? I keep Everyday Vinaigrette in a shaker bottle in my fridge door to have on hand for dressing salads throughout the week. It's good for at least a month--if it lasts that long! As soon as the bottle is empty, I mix up another batch to have on hand. This dressing is so simple, yet versatile. It's a staple in my kitchen.

1. Don’t overthink it! Fretting about the details defeats the purpose of a simple lunch. While all these recipes taste amazing when the directions are precisely followed, feel free to use these forgiving recipes as a starting point instead of an iron-clad list of instructions: use what you have, substitute freely, eyeball quantities.
