Though the liquor swap is a simple one, the scotch Negroni is very much its own drink. “To a degree, all Negronis are chasing the same flavor profile: strong, balanced, bitter, with a sweetness from the vermouth,” says Shawn Soole, a bartender and consultant based in Victoria, B.C., who has been serving this scotch Negroni for eight years.
- 1 1/2 oz Islay scotch (such as Bowmore or Laphroaig)
- 3/4 oz Martini & Rossi bianco vermouth
- 3/4 oz Cynar amaro
- Garnish: Grapefruit twist
Add all the ingredients into a mixing glass with ice and stir until well-chilled.
Strain into a chilled coupe glass.
Garnish with a grapefruit twist.
