Potatoes - 206 recipes
Potato recipes for any culinary fad :) Baked potatoes, in food (stew and mousse with chicken or fasting), in soup and broth, fried, au gratin, puree or salad. The potato is by far the vegetable that knows the most culinary uses.
Originally from Peru, South America, culture POTATO , has been introduced quite slowly in Europe, due to prejudices related mainly to some negative effects of its use in food. In order to expand the potato crop, it was necessary, at the beginning, for the governments to take special measures. Thus, in Spain it has been cultivated since the 15th century. XII, but then, it was more difficult to spread to other countries such as Italy, Germany and, much later, to France, where it began to be cultivated only at the end of the century. XVII, following the persevering struggle of the agronomist Parmentier, who managed to obtain the potato varieties known today. Glad to succeed, at a ball at the royal palace, he offered King Louis XVI a potato flower, which the queen caught in her dress. Since then, potato cultivation has spread to more and more areas and today it is a staple food for almost all peoples of Europe and beyond. In our country the culture of this plant started only in the 15th century. XVIII and, especially, at the beginning of the century. XIX.
The potato has many nutritional qualities and contains: carbohydrates, lipids, proteins, mineral salts: potassium, magnesium, calcium, phosphorus, manganese, etc. and vitamin B. It becomes toxic only when it sprouts or is kept in close contact with daylight, when it turns green because it develops a poisonous substance called salanin. To remove it, the potatoes in question must be thoroughly cleaned in places where there are fangs or where they are green. Potatoes retain their best nutritional qualities when boiled or peeled.
In food diets, it is known, it is used a lot potato. In fact, this vegetable is generally a staple food. It contains complex nutrients and is suitable for many types of preparation for various diets. It can be prepared boiled, baked, fried, in the form of purees or papanas etc. Doctors point out that the potato alone could cover all the man's needs for vitamin C. However, its preparation is closely related to the variety, to the qualities of each type of potato. When your potatoes are crushed and boiled, the choice you made is to blame for the purchase. Potatoes are therefore chosen according to the planned menu for preparation. Potatoes of the "early yellow" variety, for example, are of a higher consistency, resistant to boiling, crumbly. The tubers of this variety are easily recognizable, as they are large, round, flattened, with a yellow, smooth and thin skin, their eyes are prominent and eyebrowed, the core is yellow, they contain up to 13% starch. the chef aims to prepare papanas, he has to buy "summer pink" potatoes. They are oval, elongated, pink, thin, smooth. They have small and shallow eyes. Their core is white, crumbly and tasty.Another potato variety suitable for salads, for frying and others is "Viola". surface even smaller.Their core is yellow. The starch content is only 12-14 %.In almost all markets there are potatoes from the well-known variety "soaps", very tasty and economical. They appear at a time of year when people are asked for a more consistent food, with the addition of tomatoes, peppers, cucumbers, etc .. They have the highest percentage of starch, up to 17% and are very suitable for purees, papanas and croquettes. Their shape is elongated, pink in color, with a shade of light red. They have a smooth, thin skin and large, eyebrow-shaped eyes. Their core is white and tasty.

FRESH. FOOD. CLOSE.
Sometimes we are very hungry and we have too little time. Or we just have a craving for fast food. And that's fine. But why doesn't a quick snack have to be fresh?
We believe in fast food. But this idea needs an update.
So we were inspired by urban hotspots from London to Vancouver and came up with the best ideas and recipes. For us, "fast food" means first of all that you get your food quickly. At the Potato Factory, French fries are made from fresh potatoes and homemade sauces, freshly cut herbs. With us you can save time or spend time.
We look forward to eating fast, fresh, varied at the right prices in a wonderful atmosphere, in the old center of Craiova.

How to cook potatoes to have a healthy menu
Potatoes were originally grown in South America 10,000 years ago. Spanish explorers introduced them to Europe in the early 16th century. So, when I said that they seem to be the national food of Romanians, I didn't really speak. But I was serious when I said that they are very consumed in Romania, because they are extremely versatile. You can eat them as a side dish with any meat dish. During fasting periods, they are also present almost daily on the tables of the faithful.
Among the most common potato dishes are potato soup, mashed potatoes and potato food, all of which can be vegan (fasting) or not. But how else can you cook more potatoes, so that they are delicious, if you don't want to fry them?
1. Cream of potato soup with vegetables
A classic vegetable cream soup can be made from potatoes, carrots, peppers, onions and zucchini. All this, well cooked and then blended in a blender, with a little butter or cooking cream, then seasoned simply with salt and pepper. Croutons are optional.
The role of the potato in cream soups is to bind the composition and make it slightly elastic. Therefore, the potato is used in almost any cream soup, regardless of whether it is the star ingredient or whether it has peas, celery or other vegetables in larger quantities.
2. Potato salads
The classic oriental salad has boiled potatoes, onions, olives, and dressing. This is the fasting option, but it can be improved with either raw vegetables such as tomatoes, cucumbers, peppers and green onions, as well as boiled eggs or smoked fish.
But you can make a lot of boiled potato salads, so you have a healthy, full and tasty meal. When it comes to potato salads, only imagination is the limit. You can use avocado, different types of cheese, pancetta, prociutto crudo, sos pesto or a simple vinaigrette and aromatic herbs such as dill or parsley.
Also, potato salads are not necessarily made using boiled potatoes, but you can also use baked potatoes.
3. Stuffed and baked potatoes
If you want a simple meal, you can wash the potatoes well and peel them with everything, just sprinkle with a little olive oil and sprinkle with salt and pepper. But there are also more sophisticated variants, in which you first bake them whole, then dig them out a little and fill them.
We filled some with eggs and I put parmesan on top of them. But you can use fillings based on meat, fish, cheese or vegetables. Or you can combine them all to your liking.
4. Potato gratin
Gratin is a cooking technique that comes from France and involves covering the dish with breadcrumbs, grated cheese, eggs or butter and then baking.
It's extremely easy to cook au gratin potatoes. All you have to do is cut the potatoes into thin slices and place them in a tray, in layers interspersed with other ingredients. You can choose pumpkin, broccoli, mushrooms, fried bacon, ham or boiled eggs. It is important to use cheese or cheese for any gratin! So, you can cook au gratin potatoes even if you only have potatoes, cheese and eggs at hand. In the spring you can put and leurdă or other spring greens.
5. Mashed potatoes
Instead of fried potatoes in a lot of oil, how about some mashed potatoes? They are extremely tasty with garlic, parmesan and greens. You can serve them as a side dish, but they are also very good as a main course, along with a fresh salad.
To cook mashed potatoes, you must first boil them in their skins. We recommend that you choose smaller potatoes with a thin skin, which you should wash well before boiling. Then, place them on a tray on which you have previously placed baking paper and lightly crush them with a puree strainer. You don't have to press too hard. Either sprinkle them with a little olive oil and sprinkle with salt and pepper, or give them more flavor using garlic, herbs like rosemary, oregano, thyme, different types of spices, from chili flakes to smoked paprika, or juggle everything kind of cheese. Then put them in the oven until they are browned and ready! You can serve them with a spoonful of sour cream and a lettuce.
