This vegetarian French onion soup uses vegetable broth instead of the traditional beef broth. Guests will love that this vegetarian soup is topped with bubbling hot cheese.

Marcella Hazan's Spaghetti with Smothered Onions


2 tablespoons butter
2 tablespoons olive oil
1 ½ pounds onions, sliced very thin, about 6 cups
½ cup dry white wine
2 tablespoons chopped parsley
⅓ cup Parmesan
1 to 1 ½ pounds spaghetti


1. Put the butter, olive oil, and onions with some salt in a large sauté pan. Cover and turn on the heat to very low. Cook for almost an hour until the onions become very soft.

2. Uncover the pan, raise the heat to medium high, and cook the onions until they become colored a deep, dark gold. Any liquid the onions may have shed must now boil away.

3. Add liberal grindings of pepper. Taste and correct for salt. Bear in mind that onions become very sweet when cooked in this manner and need an adequate amount of seasoning. Add the wine, turn the heat up, and stir frequently while the wine bubbles away. Add the parsley, stir thoroughly, and take off heat.

4. Toss with cooked drained pasta, adding the grated Parmesan. As you toss, separate the onion strands somewhat to distribute them as much as possible throughout the pasta. Serve immediately.


Combined with perfectly seasoned and sauté onions, garlic, and of course any other varied herbs and spices you love, you can serve sautéed mushrooms and onions as a stand alone or a complimentary classic side dish recipe.

In a large skillet melt butter. Add red and green bell pepper and onion sauté for 3 to 4 minutes, or until the onion is translucent.

Add the fresh or frozen thawed corn kernels, salt, and ground black pepper.

Cook, stirring, for 3 minutes stir in fresh chopped parsley.

Recipe Variations

  • Add a tablespoon or two of jalapeno pepper or another hot chile pepper to the skillet with the onion and bell peppers.
  • Replace about half of the bell pepper with mild chile pepper, such as Anaheim.
  • Try this skillet-fried corn recipe.

Recipe Summary

To mix the dough, combine the milk, sunflower oil, egg yolk, flour, and 1/2 teaspoon salt in a bowl. You can use an electric mixer or knead the dough by hand until it forms a smooth, stiff dough. Shape the dough into a log, wrap it in plastic wrap, and set aside.

Soak the dried porcini in 1/2 cup hot water for 45 minutes. Meanwhile, cook the potatoes in boiling salted water to cover until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.

Chop the rehydrated mushrooms, reserving the soaking liquid. Mash the potatoes, adding the mushroom-soaking liquid to moisten.

Heat the vegetable oil in a skillet over medium heat. Stir in the chopped onions cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the chopped mushrooms.

Mix the mashed potatoes, onions, and mushrooms season with salt and pepper to taste. Set the filling aside while you roll out the vareniky dough.

Cut the dough into discs about 3/8 inch thick and 2 inches wide (1 cm thick and 5 cm in diameter). Flatten or roll each disc on a lightly floured surface to make a thin circle. Drop the filling by tablespoonfuls into the center of each vareniky fold the dough in half and pinch the edge to seal. Repeat until all of the dumplings are filled.

Bring the gallon of water and tablespoon of salt to a boil in a large pot. Add the vareniky to the boiling water and stir once, gently. Simmer until all of the dumplings have floated to the surface, about 10 to 15 minutes. Drain well before serving.

If you’ve never heard of a galette, it’s essentially a rustic pie or tart. On the blog, I’ve shared recipes for an apple galette and strawberry galette, which are both dessert galettes.

Today, I’m sharing this recipe for a savory galette, which is basically a mushroom tart. If you’ve ever made a French onion tart, it’s not too different from that.

For this mushroom galette recipe, you’ll need pie dough for the pastry aspect. You can make your homemade pie crust or simply use a sheet of store-bought pie dough.

Once you’ve got the pie crust ready to go, you’ll spread a layer of ricotta cheese over the crust, then top it with some grated parmesan for extra flavor.

The cheese is then topped with sautéed mushrooms and caramelized onions before all of the filling is topped with gruyere cheese.

The great thing about a galette is that it’s incredibly versatile. You can use all kinds of vegetables and cheeses to make a galette, so if you’re not a fan of mushrooms or you’re not a fan of gruyere, you can swap them out.

If you are a fan of mushrooms, however, you are going to love this version.

The combination of mushrooms with onions is divine. Anytime I make this for a gathering with friends, I always get people asking me for the recipe.

You can also enjoy this mushroom galette as a meal with a glass of crisp, white wine.

To serve the galette, simply cut it up into pizza-like slices. If you’re serving it as an appetizer, you’ll want to cut them into smaller slices. If you’re serving it as a meal, you can afford to be more generous with your portions.

You can also prep this galette and freeze it for baking later. If you decide to make ahead and freeze, just be sure to increase the duration in which you bake the tart as it will likely need more time to bake through.


Tips to make best onion pakoda

  1. Taste test gram flour: Using good quality gram flour or besan is very important as it brings in a lot of aroma when roasted. Store bought gram flour goes rancid very quickly which turns bitter within a few months. So always taste test the gram flour before using.
  2. Preparing onions: To get evenly fried crisp onion pakoda, slice the onions uniformly to thin slices. Some thick and some thin will not yield you crispy pakoras. The thicker slices do not get fried well leaving the pakoras soft. So slice them to moderately thin sizes.
  3. Flour : Traditionally pakoda are made with gram flour or besan. However an additional ingredients like semolina, corn flour or rice flour is added in the street style and restaurant style as these ingredients keep the fritters crisp for longer. So do use 1 to 2 tbsps of this in the recipe.
  4. Substitutes:If you are allergic to gram flour, then you can use wheat flour to make the pakoda. Do note the taste differs but they will be still good.
  5. Temperature of oil: The oil has to be moderately hot enough before adding the dough. If the oil is not hot enough, the pakoras will soak up oil. If the oil is too hot, the onion pakoda will brown outside but will not get cooked inside.
  6. Frying pakoras: Pakodas have to be fried on a medium high flame. Frying them on a low flame will make them hard. Frying them on a high flame will burn them from outside without cooking inside.

For the crust:

Peel the potatoes and shred on a box grater. Soak them in some water for about 30 minutes.

Remove the shredded potatoes from the water, squeeze out any excess liquid from them and place them in a bowl.

Shred the onion on the same box grater and add it to the potatoes, along with 2 tablespoons of the olive oil, salt and pepper, and mix well together to combine.

Add the remaining olive oil to a 9-inch nonstick, ovenproof skillet. Add the potato mixture and pat it in evenly all over the bottom and sides. Pop it in the oven for 25 minutes.

For the filling:

In a bowl, whisk together the eggs, cream, Parmesan, salt and pepper.

Pour the mixture into the partially baked crust, then scatter in the cooked veggies, followed by the cheese.

Pop it back in the oven for another 25 minutes, or until the eggs are set and crust is golden-brown and crispy.

Once ready, loosen the sides with a knife or spatula if the bottom doesn't seem very crispy, pop it on your stovetop on medium heat until it crisps up then slide it out onto a platter. Allow it to sit for a bit before serving.
